Columbia Games (www.columbiagames.com) has published at least two works 
with collections of floor plans for castles. They are designed for the 
Harn setting but should be useful in any mediaeval setting. Search for 
"Castles of Harn" and "Castles of Orbaal". You could also search the 
download section of www.lythia.com, they have a lot of settlements and 
castles (also designed for Harn).
